2 tablespoons oil
1 medium onions
3 cloves garlic
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
4 cups water
1 pound ground turkey
1 can diced tomatoes
1 cup tomato puree
1 cup salsa
2 cubes bouillon cubes
1 tablespoon parsley
1 cup corn
1 can black beans
1/2 cup sour cream
1/4 cup cilantro
1 cup tortilla chips
1 cup shredded cheese
2 stalks green onions
Method
Heat a generous splash of oil in a sizable saucepan over medium flame. Add diced onions and sauté until they become translucent, about 4 minutes.
Stir in minced garlic, along with chili powder, cumin, and oregano, and cook for an additional minute to awaken the spices' aromas.
Add water to the pot, then mix in ground turkey, chopped tomatoes, tomato puree, salsa, bouillon cubes, and a sprinkle of parsley. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes until the bouillon cubes are completely dissolved.
Incorporate corn, black beans, half a cup of sour cream, and a quarter cup of chopped cilantro; allow the stew to simmer for 20 to 30 minutes to allow flavors to meld together.
