This zesty tomato relish is a delightful blend of tomatoes, onions, and apples, simmered with spices for a tangy condiment perfect for enhancing various dishes.


Ingredients

  • 6 pints chopped tomatoes
  • 1 cup diced onions
  • 1 cup diced apples
  • 1 cup sugar
  • 1 cup vinegar
  • 1 bundle pickling spices

Method

  1. Inspect six pint-sized jars for any damage and ensure the rings are rust-free; discard any unsuitable jars. Sterilize the jars by immersing them in simmering water while you prepare the relish. Clean the new lids and rings with warm, soapy water.
  2. In a large cooking pot, combine chopped tomatoes, diced onions, diced apples, sugar, vinegar, and a bouquet of pickling spices. Bring the mixture to a boil, then reduce the heat and let it simmer for around 10 minutes, stirring occasionally.
  3. Carefully ladle the hot relish into the sterilized jars, leaving a 1/4 inch gap at the top. Use a clean knife or a thin spatula to eliminate any air bubbles by sliding it along the inner edges of the jars. Wipe the rims with a damp paper towel to ensure a good seal. Place the lids securely on top and tighten the rings.
  4. Position a rack in the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil, then gently lower the jars, leaving 2 inches of space between them, into the boiling water using a jar lifter. Add more boiling water if required to ensure the jars are submerged by at least 1 inch of water. Cover the pot and process the jars for 40 minutes at a rolling boil.
  5. After processing, carefully remove the jars from the pot and let them cool on a clean surface, spaced apart by several inches, for 12 to 24 hours. Check each lid for a proper seal by pressing down in the center; it should remain firm. Once cooled, remove the rings for storage and keep the jars in a cool, dark location.
