Ingredients
8 oz rice noodles
1/3 cup olive oil
1/4 cup rice vinegar
2 tbsp soy sauce
1 tbsp white sugar
1 tbsp lemon juice
1 tbsp lime juice
1/2 tsp salt
1/2 tsp turmeric
1/2 tsp paprika
2 cups romaine lettuce
1 whole red bell pepper
1/2 whole red onion
1/4 cup green onions
1 whole cucumber
1/4 cup fresh basil
1/4 cup cilantro
1 tbsp ginger
1 whole jalapeno
2 cloves garlic
Method
Start by boiling water in a large bowl, then add the rice noodles and cover for about 10 minutes to let them soften. Afterward, drain the noodles and drizzle in a tablespoon of olive oil, stirring to ensure they are well coated.
In a spacious mixing bowl, layer in the chopped romaine, diced red bell pepper, sliced red onion, chopped green onions, diced cucumber, fresh basil, cilantro, minced ginger, diced jalapeno, and minced garlic along with the prepared rice noodles.
In another bowl, whisk together olive oil, rice vinegar, soy sauce, white sugar, lemon juice, lime juice, salt, turmeric, and paprika to create a vibrant dressing. Pour this over the noodle and vegetable mixture, then toss everything together until well combined.
