Ingredients
1 pound ground chicken
1 medium onion
2 stalks scallions
2 tablespoons lime juice
1/4 cup cilantro
1/4 cup fresh mint
1 tablespoon ginger
1 stalk lemongrass
1 tablespoon fish sauce
1/2 teaspoon red pepper flakes

Method
Heat a large skillet over medium heat and add ground chicken, cooking it while breaking it apart until it turns golden brown, which should take about 5 minutes.
Add diced onions and chopped scallions, cooking until the onions are soft and the chicken is nicely browned, roughly 2 minutes.
Mix in lime juice, fresh cilantro, mint leaves, minced ginger, lemongrass, fish sauce, and a dash of red pepper flakes. Allow the mixture to simmer for another 3 minutes to combine the flavors.
