Ingredients
4 cups carrots
2 tablespoons sugar
1/2 cup water
1/4 cup vinegar
2 cloves minced garlic
2 tablespoons fish sauce
1 tablespoon curry paste
2 tablespoons lime juice
1 teaspoon red pepper flakes
1/2 cup crushed peanuts
Method
Start by adding freshly grated carrots into a spacious mixing bowl.
In a small saucepan, mix together sugar, water, and vinegar; heat the blend until it boils, stirring continuously for about 5 minutes until the sugar dissolves completely.
Lower the heat to medium, then incorporate minced garlic, fish sauce, and a dollop of curry paste into the saucepan; allow it to simmer for 2 to 5 minutes to enhance the flavors.
Remove the saucepan from the heat and let the dressing cool down entirely for around 30 minutes.
Once cooled, mix in fresh lime juice and a sprinkle of red pepper flakes, then pour it over the grated carrots.
Add a handful of crushed peanuts and mix everything well to ensure the carrots are evenly coated.
Chill the salad in the refrigerator for at least 30 minutes before serving to let the flavors harmonize.
