These Zesty Tex-Mex Enchiladas are a deliciously cheesy dish filled with bold flavors, perfect for a comforting dinner.


Ingredients

  • 8 pieces tortillas
  • 2 cups cheese
  • 1 tablespoon onion
  • 2 teaspoons chili powder
  • 1 cup vegetable oil
  • 1 cup chili sauce
  • 1 cup enchilada sauce

Method

  1. Start by preheating your oven to 350°F (175°C).
  2. In a small pot, combine chili and enchilada sauce, cooking over medium-low heat until it simmers, stirring occasionally. Once done, set this tasty sauce aside.
  3. In another pan, warm vegetable oil with chili powder over medium heat. Fry a tortilla until it puffs up slightly. Carefully lift it out with a spatula and place it on a plate.
  4. While the tortilla is still warm, add about a quarter cup of cheese and a tablespoon of onion along its center. Roll the tortilla tightly around the filling and lay it seam-side down in a 9x13-inch baking dish. Repeat this for the remaining tortillas.
  5. Sprinkle two-thirds of the leftover cheese on top of the rolled enchiladas. Then, pour the warm chili sauce evenly over them, finishing with the remaining cheese on top.
  6. Bake in the oven for 20 to 25 minutes, or until the cheese is melted and bubbling nicely.
