Deliciously cheesy enchiladas filled with seasoned beef and topped with a rich sauce, perfect for a comforting dinner.
Ingredients
1 pound ground beef
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
to taste salt
1 cup tomato sauce
2 1/2 cups water
2 tablespoons flour
1 teaspoon sugar
for frying oil
8 pieces tortillas
2 cups cheese
Method
Preheat your oven to 350°F (175°C) to get it ready.
In a large skillet, cook the ground beef over medium heat, breaking it apart until it's browned. Drain any excess grease and season with chili powder, paprika, cumin, garlic powder, and salt. Add the tomato sauce and 2 cups of water, then let it simmer on low heat.
In a separate bowl, mix the remaining water with flour and sugar until smooth. Gradually add this mixture to the simmering beef sauce, stirring constantly until it thickens, which should take about 10 minutes.
While the sauce is thickening, heat some oil in another skillet over medium-high heat. Lightly fry the tortillas until they are soft and pliable. Fill each tortilla with a bit of cheese, roll them up, and place them in a 9x13-inch baking dish, reserving some cheese for later. Pour the beef sauce evenly over the rolled tortillas and top with the remaining cheese.
Bake in the oven for 25 minutes or until the cheese is bubbly and golden.
