Ingredients
2 tablespoons oil
1 teaspoon cumin seeds
1 tablespoon grated ginger
1/2 teaspoon cayenne pepper
1 teaspoon fennel seeds
a pinch asafoetida
1 teaspoon garam masala
1 cup water
2 tablespoons sugar
1/4 cup tamarind paste
Method
Start by heating a splash of oil in a saucepan over medium heat.
Add cumin seeds, freshly grated ginger, cayenne pepper, fennel seeds, a dash of asafoetida, and garam masala to the oil, and sauté the mixture for about 2 minutes to release their aromatic flavors.
Next, pour in water along with sugar and tamarind paste, stirring well.
Bring the mixture to a boil before reducing the heat, allowing it to simmer gently for 20 to 30 minutes until it thickens into a luscious, deep brown sauce that can coat the back of a spoon.
Keep in mind that the sauce will continue to thicken as it cools.
