Ingredients

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon grated ginger
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon fennel seeds
  • a pinch asafoetida
  • 1 teaspoon garam masala
  • 1 cup water
  • 2 tablespoons sugar
  • 1/4 cup tamarind paste

Method

  1. Start by heating a splash of oil in a saucepan over medium heat.
  2. Add cumin seeds, freshly grated ginger, cayenne pepper, fennel seeds, a dash of asafoetida, and garam masala to the oil, and sauté the mixture for about 2 minutes to release their aromatic flavors.
  3. Next, pour in water along with sugar and tamarind paste, stirring well.
  4. Bring the mixture to a boil before reducing the heat, allowing it to simmer gently for 20 to 30 minutes until it thickens into a luscious, deep brown sauce that can coat the back of a spoon.
  5. Keep in mind that the sauce will continue to thicken as it cools.
