These zesty sweet potato burritos are a delicious blend of creamy sweet potatoes and savory black beans, all wrapped in warm tortillas and baked to perfection.
Ingredients
2 medium sweet potatoes
1 can black beans
1 medium onion
2 cloves garlic
4 pieces tortillas
1 cup shredded cheese
2 tablespoons oil
1/4 cup water
1 tablespoon soy sauce
1 teaspoon chili powder
1 teaspoon mustard
1 teaspoon cumin
a pinch cayenne pepper
Method
Start by preheating your oven to 350°F (175°C).
In a medium skillet, heat some oil over medium heat. Add chopped onions and minced garlic, sautéing until the onions are soft and translucent.
Mash black beans into the onion and garlic mixture. Gradually pour in water while stirring, heating the mix for about 2-3 minutes. Remove from heat and stir in soy sauce, chili powder, mustard, cumin, and a dash of cayenne pepper for an extra kick.
