A delightful sweet potato bundt cake with a zesty orange glaze, perfect for any occasion.
Ingredients
1 cup sugar
1/2 cup butter
1 cup mashed sweet potatoes
1 teaspoon vanilla extract
3 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup confectioners' sugar
3-5 teaspoons fresh orange juice
to taste freshly grated orange zest
Method
Begin by preheating your oven to 350°F (175°C) and greasing a 10-inch Bundt pan before dusting it with flour.
In a large bowl, cream together the sugar and butter using an electric mixer until the mixture is fluffy. Then, blend in the mashed sweet potatoes and vanilla extract until smooth.
Add the eggs one at a time, ensuring that each is well incorporated before adding the next.
In another bowl, sift together the flour, baking powder, cinnamon, baking soda, nutmeg, and salt. Gradually mix this dry mixture into the sweet potato batter on a low speed until just combined.
Transfer the batter into the prepared Bundt pan, smoothing the top for an even bake.
Bake for about 1 hour and 20 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 20 minutes before carefully flipping it onto a serving plate.
For the glaze, combine confectioners' sugar with 3 to 5 teaspoons of fresh orange juice in a small bowl until it reaches a smooth, drizzling consistency.
While the cake is still warm, drizzle the glaze over it and finish with a sprinkle of freshly grated orange zest.
