Ingredients
1 cup sugar
1/2 cup orange juice
2 tablespoons cornstarch
1 teaspoon vanilla extract
2 cups strawberries
2 cups rhubarb
Method
In a large saucepan, combine sugar, freshly squeezed orange juice, cornstarch, and vanilla extract. Heat over medium heat, stirring until the mixture starts to bubble.
Add the diced strawberries and rhubarb to the saucepan. Reduce the heat and let it gently simmer, stirring occasionally, until the fruits become tender, which should take around 5 to 10 minutes.
