1 medium red bell pepper
1 cup mushrooms
2 cloves garlic
1 cup rice
2 cups chicken broth

Method
Begin by melting butter in a large pot over medium heat.
Stir in chopped onions, diced red bell peppers, sliced mushrooms, and minced garlic, cooking for approximately 10 minutes until the vegetables are tender.
