Ingredients
1/2 cup sweet chili sauce
1/4 cup soy sauce
2 tablespoons sesame oil
3 cloves minced garlic
1 tablespoon grated ginger
2 tablespoons lime juice
1 teaspoon chili flakes
1/4 cup heavy cream
1/4 cup mayonnaise
1 tablespoon lime zest
1 tablespoon chili garlic sauce
1 pound chicken pieces
as needed for cooking oil
2 cups rice
to taste for garnish green onions
to taste for garnish fresh cilantro
Method
Start by combining sweet chili sauce, soy sauce, sesame oil, minced garlic, grated ginger, lime juice, and a dash of chili flakes in a large mixing bowl to form a marinade. Add the chicken pieces and ensure they are thoroughly coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes or up to overnight, turning occasionally for even flavor integration.
For the lime drizzle, mix heavy cream, mayonnaise, lime zest, lime juice, and a spoonful of chili garlic sauce in a small bowl. Once everything is well blended, cover and chill until it's time to serve.
Prepare a plate with paper towels to soak up any excess marinade. Remove the marinated chicken and allow it to drain before patting it dry with additional paper towels. Heat a large cast iron skillet or grill pan over medium-high heat.
Add a splash of oil to the skillet. Cook the chicken pieces in batches, if needed, turning them carefully until they achieve a golden brown color and are fully cooked, reaching an internal temperature of 165°F (74°C). Once cooked, transfer the chicken to a plate, cover to keep warm.
To serve, place the chicken on a bed of rice on individual plates. Generously drizzle with the lime sauce and garnish with chopped green onions and fresh cilantro. Enjoy your meal! Note: Grilling the chicken can add a delicious smoky flavor, but be attentive to prevent the sweet chili sauce from burning.
