Ingredients
2 tablespoons oil
1 package seitan
1 large bell pepper
1 medium onion
2 cloves garlic
1/2 cup pineapple juice
2 tablespoons brown sugar
2 tablespoons vinegar
3 tablespoons soy sauce
1 tablespoon cornstarch
1 cup pineapple chunks
Method
Heat oil in a large skillet over medium heat. Add in the seitan and cook until it's beautifully browned, stirring occasionally.
Incorporate sliced bell peppers, diced onions, and minced garlic into the skillet. Sauté the mixture until the vegetables are tender but still slightly crisp.
In a small mixing bowl, whisk together pineapple juice, brown sugar, vinegar, soy sauce, and cornstarch until smooth. Pour this sauce into the skillet and reduce the heat to a gentle simmer.
Stir the sauce until it reaches a nice thickness, then gently fold in the pineapple chunks right before serving.
