This zesty pulled pork burrito filling is a flavorful mix of tender pork, rich seasonings, and a hint of sweetness, perfect for wrapping in tortillas or serving over rice.
Ingredients
3 pounds pork roast
4 cups water
2 cups salsa
1 cup cola
1/4 cup brown sugar
2 tablespoons fajita seasoning
2 tablespoons taco seasoning
1 can green chiles
Method
Begin by placing a pork roast into your slow cooker and adding 4 cups of water. Set it to High and let it simmer for 5 hours.
Once cooking is complete, carefully remove the pork from the slow cooker and discard the liquid. Cut the pork into four smaller sections and set them aside.
In a blender, blend the salsa until it reaches a smooth consistency. In the slow cooker, combine the smooth salsa with cola, brown sugar, fajita seasoning, taco seasoning, and diced green chiles.
Return the pork pieces back to the slow cooker, cover it, and let it cook on High for an additional 3 hours.
After the last cooking period, take the pork out of the slow cooker and use two forks to shred it into delicious, tender strands.
