Ingredients

  • 1 pound pork tenderloin
  • to taste none salt
  • to taste none black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 2 cloves minced garlic
  • 1 tablespoon hot chili sauce
  • 2 tablespoons soy sauce
  • 1/4 teaspoon red pepper flakes
  • 2 stalks green onions

Method

  1. Begin by cutting the pork tenderloin into four equal sections. Place each piece between two layers of plastic wrap and gently pound them with a meat mallet until they reach a thickness of about one inch. Season both sides liberally with salt and freshly cracked black pepper.
  2. In a bowl, mix together ketchup, rice vinegar, the juice saved from canned pineapple, brown sugar, minced garlic, spicy chili sauce, soy sauce, and a pinch of red pepper flakes. Stir until well blended and set aside.
  3. Heat vegetable oil in a skillet over high heat. Once hot, add the seasoned pork and then reduce the heat to medium. Cook until the pork is golden brown and fully cooked, which should take around 5 to 6 minutes per side. After cooking, transfer the pork to a plate.
  4. In the same skillet, switch to medium heat and add butter. Once the butter melts and begins to turn golden, add the pineapple chunks. Sauté until the pineapple is caramelized and slightly browned, taking about 3 to 4 minutes.
  5. Pour the ketchup mixture into the skillet along with the white parts of green onions. Reduce the heat to low and let it simmer until the garlic and onions soften, which will take about 5 minutes.
  6. Add the cooked pork back into the skillet, stirring to ensure everything is heated through. Serve hot, garnished with the green onion tops.
