Ingredients
1 pound ground beef
1 large egg
2 tablespoons cornstarch
1 teaspoon salt
1 medium onion
1 medium bell pepper
2 tablespoons oil
1 cup pineapple juice
2 tablespoons soy sauce
1 tablespoon vinegar
1 cup water
2 tablespoons sugar
1 cup pineapple chunks
1 medium green peppers
1 medium carrots
Method
In a large mixing bowl, combine ground beef, an egg, cornstarch, salt, chopped onion, and diced bell pepper, mixing until fully incorporated. Roll the mixture into 20 meatballs, each around one inch in diameter.
Heat a large skillet over medium heat and cook the meatballs until they are golden brown on all sides. Once cooked, drain any excess fat and set them aside.
In a separate saucepan, heat some oil over low heat, then pour in the pineapple juice and let it simmer for a few minutes.
In a small bowl, whisk together cornstarch, soy sauce, vinegar, and water until smooth. Add this mixture to the simmering pineapple juice along with sugar, stirring continuously until the sauce thickens.
Introduce the browned meatballs, along with pineapple pieces, green peppers, carrots, and onions to the sauce. Mix well and heat through until everything is warmed up.
