Ingredients
1 head cabbage
to taste none salt
½ cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1 tablespoon honey
2 tablespoons apple cider vinegar
a pinch none cayenne pepper
Method
Start by halving a head of cabbage, then cut it into quarters. Remove the core and slice the leaves into ribbons about ½-inch wide. Place the sliced cabbage in a mixing bowl and sprinkle it with salt. Massage the cabbage for roughly a minute until it begins to soften, then allow it to rest for 10 minutes, stirring occasionally.
Once the cabbage has rested, transfer it to a colander and rinse it thoroughly under cold running water. Ensure it is well drained.
In a large bowl, combine mayonnaise, Dijon mustard, whole-grain mustard, honey, apple cider vinegar, and a dash of cayenne pepper. Whisk the mixture until it becomes smooth.
Press the cabbage to eliminate excess moisture, then mix it into the mustard dressing. Toss everything together ensuring the cabbage is evenly coated.
Cover the bowl with plastic wrap and refrigerate for at least an hour to allow the flavors to blend. Before serving, give it another toss and adjust the seasoning as needed.
