These zesty lentil tacos are packed with flavor and make a perfect dinner option. The lentils are seasoned and simmered until tender, then served in crunchy taco shells for a satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup lentils
  • 2 tablespoons taco seasoning
  • 2 cups chicken broth
  • 1 tablespoon salsa
  • 8 pieces taco shells

Method

  1. Heat oil in a skillet over medium heat, then add diced onion and minced garlic, cooking until soft and aromatic, about 5 minutes.
  2. Incorporate lentils and your choice of taco seasoning, allowing them to cook together for a minute to meld the flavors.
  3. Add chicken broth and bring to a boil. Once boiling, reduce the heat, cover, and let it simmer until the lentils are tender, approximately 25 to 30 minutes.
  4. Remove the lid and let the mixture cook for an additional 6 to 8 minutes until it thickens. Use a fork to mash some lentils and stir in a dollop of salsa for extra flavor.
  5. Fill each taco shell with about a quarter cup of the lentil mixture, and they are ready to serve.
