A vibrant and flavorful grilled chicken dish marinated in a spiced yogurt mixture, perfect for summer barbecues or family dinners.
Ingredients
2 pounds chicken pieces
1 tablespoon lemon juice
to taste none salt
1 cup yogurt
1 medium onion
3 cloves garlic
1 teaspoon garam masala
1 teaspoon ginger
1/2 teaspoon cayenne pepper
as needed none food coloring
to taste none cilantro
1 none lemon wedges
Method
Gather all the ingredients required for this flavorful dish.
Prepare the chicken by skinning the pieces and making a few shallow cuts on the surface. Place them in a shallow dish and drizzle lemon juice all over, seasoning with salt. Let it marinate for about 20 minutes.
In a separate bowl, mix together yogurt, finely diced onions, minced garlic, garam masala, freshly grated ginger, and a pinch of cayenne pepper until smooth. Add food coloring to achieve your preferred hue.
Thoroughly coat the chicken pieces with the yogurt blend, cover the dish, and refrigerate for at least 6 hours, or overnight for the best flavor infusion.
When ready to grill, preheat your outdoor grill to medium-high and lightly grease the grates. Remove the chicken from the marinade, discarding any excess.
Grill the chicken until fully cooked, with no pink visible and juices running clear. Use an instant-read thermometer to ensure it reaches at least 165°F (74°C) near the bone.
After grilling, adorn the chicken with fresh cilantro and lemon wedges to enhance its zest.
