This delightful sandwich combines the creamy richness of gouda with the nutritious bite of kale, paired with crispy sweet potato nibbles for a satisfying crunch.
Ingredients
2 cups sweet potato
1 tablespoon olive oil
2 cups kale

to taste N/A black pepper
2 tablespoons butter
4 slices gouda cheese
4 slices bacon
2 slices bread
to taste N/A mayonnaise
Method
Preheat your oven to 450°F (230°C) and arrange sweet potato pieces on a baking tray, drizzling them lightly with olive oil.
Bake the sweet potato pieces for roughly 24 minutes, turning them halfway through to achieve a nice golden color.
While the sweet potatoes are baking, heat 1 tablespoon of butter in a large pan over medium heat. Add the kale, seasoning it with salt and pepper, and sauté until it wilts and brightens in color, which should take about 5 minutes. Set aside the cooked kale once done.
Take two slices of your preferred bread and spread a layer of mayonnaise on one side of each. On the unbuttered side, place two slices of gouda cheese, half of the sautéed kale, and the cooked bacon. Top with a few sweet potato bites, followed by another layer of gouda cheese, and finally the second slice of bread.
In the same pan, melt the remaining tablespoon of butter over medium heat. Carefully place the assembled sandwiches in the skillet, pressing gently with a spatula, and cook until the cheese is gooey and the bread is golden brown, about 3 minutes per side.
