Ingredients
2 tablespoons olive oil
1 medium green bell pepper
1 medium red bell pepper
1 cup flour
2 teaspoons taco seasoning
1 pound chicken breast
1 cup black beans
1 cup salsa
1 cup shredded Cheddar cheese
Method
Begin by heating a tablespoon of olive oil in a large skillet over medium-high heat until it shimmers. Add the chopped green and red bell peppers and sauté them for around 5 minutes until they start to become tender. Remove the peppers from the skillet and set them aside.
In a bowl, mix together some flour and taco seasoning. Take bite-sized pieces of chicken and thoroughly coat them with the flour mixture. In the same skillet, pour in another tablespoon of olive oil and cook the chicken pieces over medium-high heat until they are golden brown and fully cooked, which should take about 5 minutes.
Once the chicken is cooked, add the sautéed bell peppers back into the skillet along with black beans and your favorite salsa. Mix everything well and let it simmer for an additional 5 minutes to let the flavors combine.
Serve the stir-fry while hot, topped with a generous amount of shredded Cheddar cheese for extra flavor.
