A deliciously vibrant dip made with tomatillos and creamy avocados, perfect for parties or as a snack.
Ingredients
4 pieces tomatillos
1 medium onion
2 pieces garlic cloves
2 pieces jalapenos
enough to cover as needed water
to taste teaspoon salt
1/4 cup cilantro
2 tablespoons lime juice
2 pieces avocados
Method
In a medium pot, combine the tomatillos, chopped onions, garlic cloves, and jalapenos. Add enough water to cover the ingredients and bring to a boil over medium heat. Once boiling, reduce the heat and let it simmer until the tomatillos are tender and change to a yellow-green color, which should take about 5 to 8 minutes.
Using a slotted spoon, transfer the softened mixture to a blender, being careful not to overfill it. Cover the blender lid with a kitchen towel and pulse a few times to start blending. Continue blending until the mixture is smooth, which should take around a minute. Mix in salt, chopped cilantro, and freshly squeezed lime juice, and blend briefly to combine.
Scoop out the avocado flesh and add it to the blender, mixing until everything is well incorporated. Taste and adjust the seasoning with more salt, cilantro, or lime juice as desired before serving.
