A nourishing stew filled with sweet potatoes and a variety of vegetables, perfect for a comforting dinner.
Ingredients
2 tablespoons olive oil
1 large onion
2 stalks celery
1 teaspoon Italian herbs
to taste salt
to taste pepper
1 can diced tomatoes
4 cups vegetable broth
2 medium sweet potatoes
2 medium carrots
1 cup green beans
3 cloves garlic
Method
Heat oil in a spacious pot over medium-high heat.
Introduce the diced onion, celery, Italian seasoning, salt, and pepper to the pot. Cook until the veggies are tender, which should take about 5 minutes.
Add in the chopped tomatoes with their juice, vegetable broth, diced sweet potatoes, carrot slices, green beans, and minced garlic.
Bring the stew to a rolling boil, then reduce the heat and let it simmer for approximately 30 minutes, stirring occasionally, until all the vegetables are soft.
