Indulge in these delightful white chocolate cookie bars topped with a creamy berry frosting, perfect for satisfying your sweet tooth.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
a pinch salt
0.5 cups butter
0.5 cups granulated sugar
1 egg
1.5 teaspoons vanilla extract
1 cup white chocolate chips
2 cups fresh berries
1 tablespoon vegetable oil
2.5 cups powdered sugar
Method
Start by preparing an 8-inch square baking pan by lining it with parchment paper and giving it a light spray of cooking oil.
In a bowl, mix together the flour, baking powder, and a pinch of salt to create your dry ingredients.
In a stand mixer fitted with a paddle attachment, beat together half a cup of softened butter and sugar until the mixture becomes fluffy and light. Add in one egg and a teaspoon of vanilla extract, mixing until everything is well combined.
Slowly add the dry ingredients to the wet mixture, folding in white chocolate chips at the end. Press the dough evenly into the prepared pan and refrigerate for two hours.
Preheat your oven to 350°F (175°C) and prepare a separate baking sheet with parchment paper.
Bake the cookie base in the oven until the edges are golden and the center is set, roughly 15 minutes. Let it cool on a wire rack for about 20 minutes.
While the cookie base cools, toss fresh berries in a bowl with a little vegetable oil. Spread them out in a single layer on the prepared baking sheet.
Roast the berries in the oven until they soften, turning them halfway through the cooking process, which should take about 25 minutes. After roasting, let them cool in a bowl and chop into smaller pieces, discarding any charred bits.
In the stand mixer, beat one cup of softened butter until creamy. Incorporate the cooled berry mixture and blend on medium speed until combined. Gradually add 2 1/2 cups of powdered sugar, mixing on low, then add half a teaspoon of vanilla extract and a pinch of salt. Increase the mixer speed to high and whip until the frosting is airy and fluffy, about 3 to 4 minutes.
Spread the berry-infused frosting generously over the cooled cookie bars and cut them into enticing squares.
