Ingredients
1 cup warm water
1 cup taro puree
2 tablespoons softened butter
1 large beaten egg
2 teaspoons active dry yeast
a few drops none purple food coloring
2 tablespoons sugar
1 teaspoon salt
3 cups all-purpose flour
Method
In a large bowl with a dough hook, mix together warm water, taro puree, softened butter, beaten egg, yeast, and a few drops of purple food dye. Let it rest for about 5 minutes until you see bubbles indicating the yeast is active.
Add in sugar and salt, then slowly mix in flour on a low setting until the dough is smooth and well combined.
Transfer the dough to a floured surface, cut it into 18 equal pieces, and shape each piece into a bun.
Preheat your oven to 325°F (165°C) and line a baking tray with foil.
Place the shaped buns on the tray, cover them loosely, and allow them to rise until they've doubled in size, which should take around 20 minutes.
Bake the buns in the oven for about 20 minutes, or until they are golden brown on the bottom.
