Ingredients
3 tablespoons extra virgin olive oil
2 tablespoons white balsamic vinegar
to taste none salt
2 cups arugula
2 cups baby spinach
1 small red onion
2 medium tomatoes
1 cup feta cheese
2 cups watermelon
Method
In a separate bowl, whisk together extra virgin olive oil, white balsamic vinegar, and a dash of salt until blended; set the dressing aside.
In a large mixing bowl, combine fresh arugula, tender baby spinach, thinly sliced red onions, and chopped tomatoes.
Pour the vinaigrette over the salad ingredients and gently mix to coat everything well.
Just before serving, add crumbled feta cheese and succulent watermelon chunks on top.
