Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 pinch salt
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 medium bell pepper
  • 2 medium chopped tomatoes
  • 1 can chickpeas
  • 1 bunch fresh cilantro
  • 1 medium avocado
  • 1 cup shredded cheese

Method

  1. In a medium saucepan, combine quinoa with water and a sprinkle of salt. Bring to a boil, then reduce the heat to medium-low, cover, and let it simmer for 20 to 25 minutes until fluffy.
  2. While the quinoa is cooking, in a large mixing bowl, whisk together lime juice, olive oil, diced bell pepper, chopped tomatoes, and canned chickpeas.
  3. Once the quinoa is cooked, add it to the bowl with the vegetable and chickpea mix. Stir well and allow it to chill in the refrigerator for about 2 hours to enhance the flavors.
  4. After chilling, remove the salad from the fridge and fluff it gently with a fork. Incorporate fresh cilantro, diced avocado, and shredded cheese for an added burst of flavor.
