1 bunch kale
1/4 cup olive oil
from 1 lemon lemon juice
1 teaspoon Dijon mustard
1 teaspoon maple syrup
1 dash cumin
1 dash garlic powder
1 dash cayenne pepper

1 cup shredded carrots
1 cup roasted corn
1 cup tortilla chips
1/2 cup sliced almonds
1/2 cup smoky cheese
2 eggs hard-boiled eggs
Method
Begin by placing fresh kale leaves in a large mixing bowl. Drizzle 1 teaspoon of olive oil and sprinkle a few pinches of salt over the kale. Gently massage the oil and salt into the leaves, then allow the kale to sit for about 10 minutes to become tender.
