This colorful and nutritious rice dish combines a blend of fresh greens with rice for a delicious and healthy meal.


Ingredients

  • 2 tablespoons oil
  • 1 medium onion
  • 1 teaspoon salt
  • 2 cups spinach
  • 1 medium bell pepper
  • 1/4 cup parsley
  • 2 cloves garlic
  • 2 stalks green onions
  • 1 cup water or broth
  • 1 cup rice

Method

  1. In a medium saucepan, warm some oil over medium heat. Add chopped onions along with a sprinkle of salt, and sauté until the onions turn soft and transparent, which should take about 5 minutes.
  2. While the onions are cooking, blend together fresh spinach, diced bell peppers, parsley, garlic, green onions, and a splash of water or broth until the mixture is smooth and vibrant; set it aside.
  3. Add the rice and the remaining salt to the saucepan, stirring for about a minute to coat each grain in the oil.
  4. Raise the heat to high and pour in the green mixture, stirring everything together. Wait for the edges to start bubbling, then give it another quick stir and gently shake the pan to level the rice.
  5. Once it begins to boil around the edges (this should take about 30 seconds to 1 minute), lower the heat to medium-low, cover the pan tightly, and set a timer for 20 minutes.
  6. After 20 minutes, turn off the heat but keep the lid on for an additional 10 minutes. After resting, remove the lid and check the rice with a fork for tenderness. If it's done, fluff the rice to separate the grains. If it needs more time, cover and cook over medium-low for 5 more minutes before fluffing and serving.
