A hearty lasagna that combines layers of zucchini, a savory beef mixture, and creamy cheese, perfect for a comforting dinner.
Ingredients
1 pound ground beef
2 cups tomato sauce
1 medium onion
1 medium bell pepper
1 cup carrots
2 cloves garlic
1 teaspoon oregano
1 teaspoon basil
to taste salt
to taste pepper
1 cup cottage cheese
1 egg
2 medium zucchini
2 cups shredded mozzarella
1/2 cup Parmesan cheese
Method
Preheat your oven to 350°F (175°C) and prepare a medium-sized baking dish by lightly greasing it.
In a large skillet, brown the ground beef over medium heat for about 5 to 7 minutes, breaking it apart as it cooks. Once browned, drain any excess fat, then stir in the tomato sauce, diced onion, chopped bell pepper, grated carrots, minced garlic, oregano, basil, salt, and pepper. Allow the mixture to come to a boil, then reduce the heat and let it simmer until the vegetables are tender, around 10 minutes.
In a separate bowl, combine the cottage cheese and egg, mixing thoroughly until smooth.
Layer the bottom of the prepared baking dish with half of the zucchini strips. Add half of the cottage cheese mixture, followed by half of the beef mixture and half of the shredded mozzarella. Repeat the layering process with the remaining zucchini, beef mixture, and mozzarella, finishing off with a generous sprinkle of Parmesan cheese on top.
Place the lasagna in the oven and bake for 45 minutes. Once done, allow it to rest for 10 minutes before slicing and serving.
