Ingredients
2 large eggs
2 cups mixed vegetables
3 cups cooked rice
1/2 cup vegetable broth
3 tablespoons soy sauce
2 tablespoons cooking oil
Method
Heat a generous amount of oil in a large frying pan over medium heat. Once the oil is shimmering, add the beaten eggs and scramble them until completely cooked. Once ready, transfer the eggs to a separate plate and set aside.
In the same frying pan, add a colorful assortment of your preferred vegetables along with some broth and soy sauce. Stir the mixture and bring it to a rolling boil.
Introduce the previously cooked rice to the vegetable mixture in the skillet. Cover the pan and remove it from heat, allowing it to sit for around 5 minutes so the rice can soak up all the delicious flavors.
Gently incorporate the scrambled eggs back into the rice and vegetable mixture. Serve hot and savor the delightful combination!
