A delicious and colorful fried rice dish packed with vegetables and scrambled eggs, perfect for a quick meal.


Ingredients

  • 2 large eggs
  • 2 cups mixed vegetables
  • 3 cups cooked rice
  • 1/2 cup vegetable broth
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil

Method

  1. Heat a generous amount of oil in a large frying pan over medium heat. Once the oil is shimmering, add the beaten eggs and scramble them until completely cooked. Once ready, transfer the eggs to a separate plate and set aside.
  2. In the same frying pan, add a colorful assortment of your preferred vegetables along with some broth and soy sauce. Stir the mixture and bring it to a rolling boil.
  3. Introduce the previously cooked rice to the vegetable mixture in the skillet. Cover the pan and remove it from heat, allowing it to sit for around 5 minutes so the rice can soak up all the delicious flavors.
  4. Gently incorporate the scrambled eggs back into the rice and vegetable mixture. Serve hot and savor the delightful combination!
