2 cups pumpkin seeds
2 tablespoons butter
2 teaspoons vanilla sugar
2 teaspoons cinnamon
1/2 teaspoon granulated sugar
1 teaspoon vanilla extract
Method
Start by preheating your oven to a gentle 275°F (135°C).
In a large mixing bowl, combine pumpkin seeds with melted butter, ensuring they are evenly coated.
In a separate small bowl, whisk together 1 teaspoon of vanilla sugar, 1 teaspoon of cinnamon, and 1/2 teaspoon of granulated sugar. Add a splash of vanilla extract and mix well before combining it with the pumpkin seeds, tossing to ensure all seeds are coated.
Spread the coated seeds in a single layer on a baking sheet. In another small bowl, mix 1 teaspoon of vanilla sugar and 1 teaspoon of cinnamon, then sprinkle this mixture evenly over the seeds.
Place the baking sheet in the oven and bake for 30 minutes. After this time, stir the seeds and rearrange them, then reapply the cinnamon sugar mixture.
Return the baking sheet to the oven and continue baking for another 30 minutes.
Once baked, remove the seeds and sprinkle the remaining 1/2 teaspoon of vanilla sugar over them. Place them back in the oven for an additional 5 minutes.
Finally, remove from the oven, transfer to a serving bowl, and enjoy the seeds while they are still warm.
