Ingredients
1 pound chicken breast
2 tablespoons sesame oil
1 medium bell pepper
1 medium sweet onion
1/2 cup teriyaki sauce
1/4 cup chicken broth
1 teaspoon garlic powder
1/4 cup cashews
to taste hot sauce
1 cup pineapple chunks
4 slices Swiss cheese

Method
Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, and sauté until it's almost cooked through, about 5 to 7 minutes.
In a separate small skillet, warm the remaining tablespoon of sesame oil over medium heat. Add diced bell pepper and onion, cooking until the peppers start to soften, roughly 5 minutes. Remove from heat once done.
In the skillet with the chicken, mix in teriyaki sauce, chicken broth, diced sweet onion, and garlic powder. Bring this to a boil, then reduce the heat to medium-low, allowing it to simmer until the sauce is reduced by half and the chicken is cooked through, about 15 to 20 minutes.
Stir in the bell pepper and onion mixture, along with cashew pieces and a dash of hot sauce. Continue to simmer until everything is well heated, about 2 to 3 minutes. Remove from heat and gently mix in pineapple chunks. Finally, top the dish with slices of Swiss cheese.
