3 tablespoons fresh lime juice
1 tablespoon fish sauce
1 teaspoon sugar
1 clove minced garlic
1 whole grapefruit
1 cup cooked shrimp
1 cup diced chicken breast
1/2 cup shredded coconut
2 medium shallots
1 whole chile pepper
1/4 cup fresh mint
1/4 cup fresh cilantro
4 cups shredded lettuce
Method
Start by crafting the dressing: whisk together fresh lime juice, fish sauce, a dash of sugar, and minced garlic in a bowl until fully blended.
In a large mixing bowl, combine the grapefruit segments, cooked shrimp, diced chicken, shredded coconut, thinly sliced shallots, chopped chili pepper, and fresh mint and cilantro. Pour about 75% of the dressing over this mixture and gently toss to coat everything evenly.
In a separate bowl, combine the remaining dressing with shredded lettuce just prior to serving.
