Ingredients

  • 3 tablespoons fresh lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 clove minced garlic
  • 1 whole grapefruit
  • 1 cup cooked shrimp
  • 1 cup diced chicken breast
  • 1/2 cup shredded coconut
  • 2 medium shallots
  • 1 whole chile pepper
  • 1/4 cup fresh mint
  • 1/4 cup fresh cilantro
  • 4 cups shredded lettuce

Method

  1. Start by crafting the dressing: whisk together fresh lime juice, fish sauce, a dash of sugar, and minced garlic in a bowl until fully blended.
  2. In a large mixing bowl, combine the grapefruit segments, cooked shrimp, diced chicken, shredded coconut, thinly sliced shallots, chopped chili pepper, and fresh mint and cilantro. Pour about 75% of the dressing over this mixture and gently toss to coat everything evenly.
  3. In a separate bowl, combine the remaining dressing with shredded lettuce just prior to serving.
  4. On a generous serving platter, create a base with the dressed lettuce, then layer the colorful grapefruit and protein mixture on top.
