2 cups fresh peaches
1 cup strawberries
1 cup blueberries
1 cup raspberries

2 packages pie crust

Method
Start by preheating your oven to 350°F (175°C).
Take a 9-inch pie dish and line it with one pie crust, brushing the surface with half of a beaten egg white. Set this aside for later.
In a large bowl, mix together fresh peaches, strawberries, blueberries, and raspberries. In a separate bowl, combine brown sugar, half a cup of granulated sugar, flour, cornstarch, cinnamon, and nutmeg. Gently fold this dry mixture into the fruit, being careful to keep the berries whole. Pour the fruit mixture into the prepared pie crust, allowing it to mound up slightly. Add small pats of butter on top.
For the second pie crust, cut it into half-inch wide strips using a knife or pastry cutter. Lightly moisten the edges of the crust with water. Begin by placing two of the longest strips in an X shape at the center, then weave additional strips over and under in a crisscross pattern, using shorter strips for the edges. Tuck the ends of the strips beneath the bottom crust and crimp the edges to seal. Alternatively, you can simply cover the filling with the second crust, cutting decorative slits for steam to escape and brushing the top with the remaining egg white.
In a small bowl, combine a tablespoon of sugar with a teaspoon of cinnamon and sprinkle this mixture over the pie's surface. Place the pie on a baking sheet to catch any drips.
Bake the pie in the preheated oven until the crust turns a beautiful golden brown and the filling is bubbling, which should take about 45 to 60 minutes. After baking, turn off the oven and let the pie sit inside for another 30 minutes. Then, transfer it to a wire rack to cool completely. The filling may seem loose while warm but will firm up as it cools.
