These Harvest Feast Egg Rolls are a delightful twist on traditional Thanksgiving flavors, featuring a mix of turkey, gravy, stuffing, and cranberry sauce wrapped in a crispy shell, perfect for holiday gatherings.
Ingredients
1 cup Turkey
1/2 cup Gravy
10 pieces Egg roll wrappers
1 cup Mashed potatoes
1 cup Stuffing
1/4 cup Cranberry sauce
2 cups Oil for frying
Method
Start by warming oil in a large skillet over medium-high heat until it reaches 375°F (190°C).
In a mixing bowl, blend together turkey and gravy until the mixture is smooth and well combined.
Lay an egg roll wrapper on a clean surface, ensuring one corner is pointed towards you, forming a diamond shape. Have a small bowl of water nearby.
Place 2 tablespoons of creamy mashed potatoes in the center of the wrapper, followed by 2 tablespoons of the turkey-gravy mixture, 2 tablespoons of savory stuffing, and a drizzle of 1/2 tablespoon of cranberry sauce, all arranged vertically.
Wet your fingertips with water and run them along the edges of the wrapper. Fold the top and bottom corners over the filling first, then fold in the left corner. Roll the wrapper from left to right, fully enclosing the filling. Use extra water to seal the edges tightly by pinching them together. Continue this process until all wrappers and filling are used.
Gently place the egg rolls into the hot oil in batches, frying until they achieve a lovely golden brown color and are heated through, which should take about 3 to 4 minutes. Once done, transfer the egg rolls to a plate lined with paper towels to drain any excess oil.
