Ingredients
4 pieces hamburger buns
2 tablespoons butter
1 medium onion
2 tablespoons tomato paste
2 cloves garlic
3 tablespoons chili sauce
1 tablespoon Worcestershire sauce
1 teaspoon sugar
2 cups cooked chicken
1 tablespoon olive oil
1/2 cup relish
2 tablespoons lemon juice
1 tablespoon honey
4 cups coleslaw mix
Method
Preheat your broiler by placing the oven rack about 6 inches away from the heat source. Lay the hamburger buns cut-side up on a baking sheet.
Broil the buns for 30 to 60 seconds until they achieve a lovely golden-brown toast.
In a large skillet set over medium heat, melt some butter. Add the diced onion, followed by tomato paste and minced garlic, sautéing until the onion softens, around 5 minutes. Stir in chili sauce, Worcestershire sauce, and a sprinkle of sugar.
Add the diced chicken and a splash of olive oil to the skillet, cooking and stirring frequently until the chicken is fully cooked through and no longer pink, which should take about 5 to 10 minutes.
In another large bowl, mix together relish, fresh lemon juice, and honey. Fold in the coleslaw mix until everything is evenly coated.
Fill the toasted buns with the chicken mixture and generously top with the coleslaw.
