Ingredients
200 grams udon noodles
250 grams shrimp
3 tablespoons soy sauce
2 tablespoons mirin
1 tablespoon sake
2 cloves minced garlic
1 tablespoon brown sugar
1 teaspoon grated ginger
2 tablespoons sesame oil
1 cup mixed vegetables
2 stalks green onions
1 tablespoon sesame seeds
Method
Begin by filling a large pot with lightly salted water and bringing it to a vigorous boil. Once boiling, add the udon noodles and let them cook for about 3 minutes until they float to the top. Allow them to simmer for an additional 2 minutes to ensure they are cooked perfectly without becoming mushy.
While the noodles are cooking, prepare the teriyaki sauce in a separate bowl by mixing together soy sauce, mirin, sake, minced garlic, brown sugar, and freshly grated ginger until well combined.
In a wok, heat sesame oil over medium heat. Add the shrimp along with your choice of colorful vegetables, and stir-fry for roughly 2 minutes. Once the shrimp is cooked, remove it from the wok and set aside.
Pour the previously made teriyaki sauce into the wok with the vegetables and continue cooking for another 3 to 4 minutes to enhance the flavors. Next, add the cooked udon noodles and the reserved shrimp back into the wok. Toss everything together until it's well mixed and heated through. Serve the dish hot, garnished with chopped green onions and a sprinkle of sesame seeds for added flavor.
