A moist and flavorful spice loaf infused with a tropical flair, perfect for a snack or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/2 cup beer
  • 1 3/4 cups brown sugar
  • 1/2 cup butter
  • 1 tablespoon browning sauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons lime juice
  • 1 cup raisins
  • 1/2 cup water

Method

  1. Start by preheating your oven to 325°F (165°C) and greasing two 8x4-inch loaf pans.
  2. In a bowl, mix together the flour, baking powder, cinnamon, nutmeg, allspice, and salt, then set it aside.
  3. In another bowl, beat one egg and whisk in the milk, beer, and 1 3/4 cups of brown sugar until the mixture is smooth.
  4. Stir in melted butter, browning sauce, vanilla extract, and lime juice until thoroughly mixed.
  5. Gradually fold in the flour mixture along with raisins, mixing until the batter is smooth and uniform.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake in the oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
  8. While the loaf bakes, prepare the glaze by combining 1/2 cup of brown sugar and water in a small saucepan over high heat. Bring to a boil, then reduce to a simmer until thickened, about 5 minutes.
  9. Once the bread is finished baking, drizzle the glaze over the top and place it back in the oven for another 5 minutes.
  10. Let the bread cool in the pans for 5 minutes before moving it to a wire rack to cool completely.
