A vibrant and tangy rhubarb relish that combines fresh vegetables and zesty lime for a unique flavor experience, perfect as a snack or condiment.


Ingredients

  • 2 cups rhubarb
  • 1 medium red onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 small jalapeño pepper
  • 1 bunch fresh cilantro
  • 1 cup diced tomatoes
  • 2 tablespoons brown sugar
  • 3 tablespoons Key lime juice
  • to taste salt
  • to taste garlic powder
  • to taste black pepper

Method

  1. Start by blanching rhubarb in a pot of boiling water for about 10 seconds. Quickly drain and cool it under cold running water, then transfer the rhubarb to a large mixing bowl.
  2. In a food processor, add red onion, a mix of green, red, and yellow bell peppers, jalapeño, and fresh cilantro. Pulse 3 to 4 times until finely chopped, then combine this mixture with the rhubarb in the bowl. Gently fold in diced tomatoes.
  3. In another bowl, dissolve brown sugar in Key lime juice. Carefully fold this lime mixture into the rhubarb and pepper blend. Season with salt, garlic powder, and black pepper to taste, then mix everything thoroughly.
  4. Cover the relish and refrigerate for at least 3 hours to let the flavors develop.
