These tangy pineapple-glazed meatballs are a delightful fusion of flavors, combining the sweetness of pineapple with savory beef for a satisfying dish that's perfect for dinner.
Ingredients
1 pound Ground beef
1/2 cup Pineapple juice
1/4 cup Soy sauce
2 tablespoons Vinegar
1/4 cup Brown sugar
1 tablespoon Cornstarch
1 large Egg
1 tablespoon Worcestershire sauce
1/4 cup Milk
1/2 cup Breadcrumbs
1/2 cup Onion
1 teaspoon Salt
1/2 teaspoon Pepper
1 cup Pineapple chunks
1 large Green bell pepper
Method
Start by setting your slow cooker to Medium-High heat. In the slow cooker, mix together the reserved pineapple juice, soy sauce, vinegar, and brown sugar. Stir well, then whisk in cornstarch until the mixture is smooth.
In a large bowl, combine ground beef with an egg, Worcestershire sauce, milk, breadcrumbs, diced onion, salt, and pepper. Form this mixture into meatballs about 1 inch in diameter.
Heat a large skillet over medium heat and brown the meatballs until they develop a golden crust on all sides, which should take around 5 minutes. Once browned, place the meatballs into the slow cooker.
Add the reserved pineapple chunks and chopped green bell pepper to the slow cooker. Cover and let everything cook for approximately 1 hour, or until the meatballs are fully cooked and no longer pink in the center.
