These tangy pineapple-glazed meatballs are a delightful fusion of flavors, combining the sweetness of pineapple with savory beef for a satisfying dish that's perfect for dinner.


Ingredients

  • 1 pound Ground beef
  • 1/2 cup Pineapple juice
  • 1/4 cup Soy sauce
  • 2 tablespoons Vinegar
  • 1/4 cup Brown sugar
  • 1 tablespoon Cornstarch
  • 1 large Egg
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup Milk
  • 1/2 cup Breadcrumbs
  • 1/2 cup Onion
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Pineapple chunks
  • 1 large Green bell pepper

Method

  1. Start by setting your slow cooker to Medium-High heat. In the slow cooker, mix together the reserved pineapple juice, soy sauce, vinegar, and brown sugar. Stir well, then whisk in cornstarch until the mixture is smooth.
  2. In a large bowl, combine ground beef with an egg, Worcestershire sauce, milk, breadcrumbs, diced onion, salt, and pepper. Form this mixture into meatballs about 1 inch in diameter.
  3. Heat a large skillet over medium heat and brown the meatballs until they develop a golden crust on all sides, which should take around 5 minutes. Once browned, place the meatballs into the slow cooker.
  4. Add the reserved pineapple chunks and chopped green bell pepper to the slow cooker. Cover and let everything cook for approximately 1 hour, or until the meatballs are fully cooked and no longer pink in the center.
