Ingredients
1 cup all-purpose flour
1/2 cup butter
1/4 cup confectioners' sugar
1 cup granulated sugar
3 large eggs
1/2 cup fresh lemon juice
2 tablespoons lemon zest
3 tablespoons all-purpose flour
Method
Preheat your oven to 350°F (175°C).
In a food processor, blend together 1 cup of all-purpose flour, softened butter, and 1/4 cup of confectioners' sugar. Pulse until the mixture resembles coarse sand, or use a pastry cutter to form a dough. Firmly press this mixture into the base of a 9-inch round tart pan.
Bake the crust in the oven for 12 to 15 minutes, or until it's beautifully golden.
While the crust is baking, whisk together eggs, granulated sugar, fresh lemon juice, lemon zest, and 3 tablespoons of flour until smooth and creamy. Once the crust is ready, pour this citrus mixture over it while it's still warm.
Put the pie dish back in the oven and bake for another 15 to 20 minutes, or until the filling has set nicely.
Let the citrus squares cool in the dish for 1 to 2 hours. After they have cooled, sprinkle with 2 tablespoons of confectioners' sugar and cut into 12 triangular pieces.
