Ingredients
1 cup Chopped cabbage
1/4 cup Cilantro
1 pound Ground pork
1 medium Diced jalapeño peppers
2 large Egg whites
1 tablespoon Minced ginger
1 tablespoon Sesame oil
to taste Salt
to taste Pepper
20 pieces Potsticker wrappers
Method
Start by placing a clean dish towel on a flat surface, then scatter chopped cabbage and fresh cilantro over it. Gather the towel and gently squeeze out any excess moisture from the cabbage.
In a large mixing bowl, combine the drained cabbage and cilantro with ground pork, finely chopped jalapeño peppers, egg whites, ginger paste, and a drizzle of sesame oil. Mix thoroughly using your hands until all ingredients are well blended. Season with salt and pepper according to your taste.
Prepare two baking sheets by lining them with wax paper. Fill a small bowl with water to use for sealing the dumplings.
Take a potsticker wrapper and place it in your palm. Spoon approximately one tablespoon of the pork filling into the center of the wrapper. Use your fingertip dipped in water to moisten the edges, then fold the wrapper over the filling and pinch the edges together to ensure a tight seal. Place the completed dumpling onto one of the lined baking sheets. Repeat this process with the remaining wrappers and filling.
Once all the dumplings are made, place them in the freezer for about 2 hours to firm up. After they are frozen solid, transfer the dumplings into large resealable plastic bags for convenient long-term storage in the freezer.
