Ingredients
1 pound ground chuck
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon cumin
to taste salt
1 teaspoon garlic powder
as needed water
1 medium, diced bell pepper
1 medium, diced onion
to taste slices queso asadero
to taste tablespoons sour cream
1 diced tomatoes
to taste cups shredded lettuce
8 small tortillas
Method
In a spacious skillet, cook the ground chuck until browned, adding chili powder, paprika, cumin, salt, and garlic powder for flavor. Pour in enough water to cover the meat completely and bring to a boil.
When the mixture reaches a boil, reduce the heat and allow it to simmer for one hour. Stir occasionally, breaking up the meat into finer pieces as it cooks. If necessary, add more water to keep the liquid level consistent.
After simmering, add chopped bell pepper and onion to the skillet, continuing to simmer for another 30 minutes. Once done, drain the mixture while reserving the liquid, and skim off any excess fat from the top.
Return five tablespoons of the reserved liquid to the skillet with the beef and vegetables, heating until everything is warmed through.
Prepare the tacos by filling warm tortillas with the beef mixture, then top with queso asadero, a dollop of sour cream, diced tomatoes, and a handful of shredded lettuce.
