A delightful preserve combining the sweetness of strawberries and figs, perfect for spreading on toast or using in desserts.


Ingredients

  • 4 cups figs
  • 2 cups sugar
  • 1 box strawberry gelatin

Method

  1. In a sizable saucepan, mix together the chopped figs and sugar, warming over medium heat while stirring often until the sugar completely dissolves.
  2. Add strawberry gelatin to the mixture and raise the heat to achieve a rolling boil, cooking for about 7 minutes. For a smoother consistency, mash the mixture with a potato masher.
  3. Sterilize your canning jars and lids by boiling them in water for at least 5 minutes. Carefully pour the hot preserve into the warmed jars, leaving a 1/4 inch gap at the top. Use a knife or spatula to remove any air bubbles, then wipe the rims with a damp cloth for a perfect seal before placing the lids on and securing them with rings.
  4. Place a rack at the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil and gently lower the filled jars in using a jar lifter, ensuring a 2-inch space between each jar. If needed, add more boiling water until the jars are covered by at least 1 inch of water. Cover the pot and let it boil for 10 minutes.
  5. After the boiling process, carefully remove the jars from the pot and set them on a cloth or wooden surface to cool, ensuring they are spaced apart. Once they are fully cooled, press the center of each lid to confirm a secure seal; it should not flex. Store the sealed jars in a cool, dark location.
