Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 large eggs
  • 1 cup sweet potato puree

  • 1 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/2 cup milk
  • 1 cup white sugar
  • 2 large egg whites
  • 1/4 cup cold water
  • 1/4 teaspoon cream of tartar
  • 1 cup marshmallow creme

Method

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, beat together brown sugar and softened butter until the mixture is light and fluffy. Add eggs one at a time, mixing well after each addition. Then, stir in sweet potato puree and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, spices (cinnamon, ginger, nutmeg, and cloves), baking soda, and salt. Gradually mix half of the dry ingredients into the sweet potato mixture, followed by the milk, and then the remaining flour mixture until just combined.
  4. Pour the batter evenly into the prepared muffin cups. Bake for 18 to 22 minutes, or until the tops bounce back when lightly pressed and a toothpick comes out clean. Let the cupcakes cool on a wire rack.
  5. For the marshmallow frosting, combine white sugar, egg whites, cold water, cream of tartar, and a pinch of salt in a heatproof bowl. Place this bowl over simmering water and beat with an electric mixer until hot to the touch and stiff peaks form, about 5 to 7 minutes. Remove from heat and mix for one more minute before gently folding in marshmallow creme and vanilla until smooth.
  6. Once the cupcakes are cool, use a pastry bag with a large tip to pipe fluffy marshmallow topping on each cupcake, or spread it generously with a spatula to create beautiful swirls.
  7. Adjust your oven rack to about 6 inches from the broiler and activate the broiler. Broil 3 or 4 frosted cupcakes on a baking sheet for about 90 seconds, watching closely and rotating the sheet to achieve a uniform golden-brown finish. Repeat with the remaining cupcakes.
