Ingredients

  • 1 package cornbread mix
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup honey
  • to taste tablespoon sugar
  • 2 tablespoons butter

Method

  1. Preheat your oven to 375°F (190°C). Line a muffin tin for 12 muffins with paper liners.
  2. In a large bowl, mix together the cornbread mix, milk, sour cream, eggs, and honey. Stir gently until the mixture is combined, leaving a few lumps for texture. Allow the batter to rest for about 5 minutes.
  3. Carefully fill each muffin liner with the batter, filling them about three-quarters of the way. If desired, sprinkle a little sugar on top for sweetness.
  4. Bake in the preheated oven for 18 to 20 minutes, or until the muffins turn a lovely golden brown.
  5. After baking, brush the tops with melted butter for an extra touch of flavor. Serve warm or let cool before enjoying.
