Ingredients

  • 3 large Eggs
  • 1 cup cup Granulated Sugar
  • 1 cup cup Chopped Nuts
  • 1 teaspoon teaspoon Vanilla Extract
  • 1 sheet sheet Parchment Paper

Method

  1. Preheat your oven to 325°F (165°C) and prepare a 9x9x2 inch baking pan by lining it with parchment paper and lightly greasing it.
  2. Separate the egg yolks from the whites. In a bowl, vigorously whisk the yolks until they become thick and almost triple in size. Gradually add in the sugar while continuing to whisk until the mixture is very thick.
  3. Carefully fold in the chopped nuts and your desired flavor extract into the yolk mixture. In another bowl, whisk the egg whites until stiff peaks form, ensuring they are not over-whipped. Gently incorporate the beaten egg whites into the yolk and nut mixture.
  4. Transfer the batter into the prepared baking pan, smoothing out the top with a spatula. Bake for approximately one hour, or until a toothpick inserted in the center comes out clean.
  5. After baking, let the bars cool in the pan for about 10 minutes before inverting them onto a wire rack to peel off the parchment paper. Allow them to cool completely before slicing into squares or bars.
