1 cup butter
1/2 cup sugar
1/4 cup corn syrup
1 unit egg yolk
1 3/4 cups flour
1 unit egg white
1 cup chopped nuts
1/2 cup jam
Method
In a large mixing bowl, cream together the softened butter and sugar until you achieve a smooth and fluffy texture. Incorporate the corn syrup and egg yolk, mixing well until fully combined.
Gradually add in the flour, stirring until a cohesive dough forms. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes to firm up the dough.
Preheat your oven to 325°F (165°C) and lightly grease your baking sheets to prevent sticking.
Once chilled, take the dough and roll it into small balls, about 1 inch in diameter. Dip each ball in egg white and then roll it in finely chopped nuts for added crunch.
Place the nut-coated balls on the prepared baking sheets, spacing them about 2 inches apart. Use your finger to gently press down in the center of each ball to create a small well.
Bake in the preheated oven for 20 to 25 minutes, or until they are beautifully golden brown. While the cookies are still warm, fill each indentation with a generous dollop of your favorite jam. Allow the cookies to cool on the baking sheets before serving.
